There are two species of these birds: the North American (M. gallopavo) and the Central American Ocellated (M. ocellata.) The North American species is the predecessor of the modern domesticated species. It was domesticated in Mexico and taken to Europe by the Spanish. The Occellated species was domesticated by the Mayans. The Aztecs and other tribes of the South America relied on these birds as a major source of protein, and also utilized their feathers extensively for decorative purposes. Nowadays, meat of this bird is regarded as the official Mexican food. The name of the species doesn’t represent the bird’s origin, but a tendency to attribute exotic foods to far-off countries.

This is the largest of North America's game birds. Adult males, known as toms, or gobblers, normally weigh between 16 and 24 pounds. Females, that are known as hens, are smaller than males and usually weigh between 8 and 10 pounds. The largest bird on record weighed 37 pounds. The maales have iridescent red, green, copper, bronze and gold feathers. These birds have such a plumage that attracts females during breeding season.
